Caprese Pasta Salad


Servings 4

6 oz red onion diced
1 pint grape tomatoes halved
1 pound mozzarella balls, drained
1 cup basil fresh, chopped or julienned
1 pound pasta of your choice
1/4 cup balsamic vinegar
3/4 cup olive oil extra virgin
salt and pepper to taste
Balsamic Vinegar Dressing:
3 T balsamic venegar
1 T Dijon mustard
1 garlic clove, minced
1/2 cup olive oil
Salt and freshly ground pepper


Bring a large pot of salted water to boil. Cook pasta according to directions on package. Drain pasta and set aside to cool.
When pasta is cool, toss with diced onion, tomaotes, fresh mozzarella & basil. Pour the balsamic vinegar and extra virgin olive oil over the mixture and toss until evengly coated.
Season with salt and pepper. Chill in refrigerator for 30 minutes before serving.
