Salmon Salad with Avocado


2 eggs, hard boiled

1 cup grape tomatoes (washed and halved)

Earthbound Farm Organic Kale Italia

1 large salmon filet

1 avocado, sliced


5 Tbsp extra virgin olive oil

1 lemon (juiced)



1 sprig thyme


Pre-heat oven to 375

2 Add 4 tbsp of olive oil, lemon juice, salt, pepper, and fresh thyme to tomatoes and greens, toss to coat
3 Sear the salmon in the pan, skin side down. Flip after 3 minutes and cook until golden
4 Place salmon pan in the oven for 5 additional minutes until cooked through
5 Assemble all remaining ingredients
6 Enjoy!
