Salmon Salad with Avocado, Eggs & Lemon Thyme Dressing

Ingredients

  • 2 eggs, hard boiled
  • 1 cup grape tomatoes (washed and halved)
  • Earthbound Farm Organic Kale Italia
  • 1 large salmon filet
  • 1 avocado, sliced

Dressing

  • 5 Tbsp extra virgin olive oil
  • 1 lemon (juiced)
  • salt
  • pepper
  • 1 sprig thyme

Directions

  1. Pre-heat oven to 375
  2. Add 4 tbsp of olive oil, lemon juice, salt, pepper, and fresh thyme to tomatoes and greens, toss to coat
  3. Sear the salmon in the pan, skin side down. Flip after 3 minutes and cook until golden.
  4. Place salmon pan in the oven for 5 additional minutes until cooked through
  5. Assemble all remaining ingredients
